Pastificio Graziano is based in Monocalzati (AV)-Italy in the heart of Irpinia and the Campania region.

Its productive philosophy originates from the pasta Napolitani’s masters while keeping the characteristics of the native land. Its food culture materializes in a genuine pasta because is produced with 100% Italian ingredients such as durum wheat, semolina, water and wisdom of past makers.

Pastificio Graziano produces dry pasta of high quality in typical regional format using local highly selected raw materials. That is what makes the unique flavour of this pasta!!! Strict controls carried out throughout the entire production chain shows that quality is at the heart of its values, from the choice of the grain to the monitoring through the ultra-filtration of the water till the identification of where the pasta comes from via the use of batch numbers on the package’s label purchase.

Pastificio Graziano is one of the few to boast the Kosher and Halal’s marks if further need was due to certify its conformity to ethical standards and hygiene.

Our Story

Born from an ancient passion, the Pastifcio Graziano is in Manocalzati in the shadow of the Monti Picentini, environment uncontaminated nature of Irpinia area. Its productive philosophy moves in the furrow of tradition of the pasta Napoletani’s masters, while keeping the characteristics of the native land. The love for the territory and its food culture is materializes in a paste genuine, because produced with 100% Italian ingredients: durum wheat semolina, water and wisdom of pasta makers. Indeed, the Pastifcio Graziano produces dry pasta of high quality exclusively in typical regional formats using local raw materials.

The tradition of the working methods of the historical artisan’s Gragnano, that includes the bronze- drawing process and the slow static drying on frames for at least two days at a low temperature, It blends with the modernity of the new plant that uses innovative machines for the kneading, pressing and drawing process; the strong territorial roots orients to choose local raw materials of high quality, as the durum wheat semolina of Altamura and, especially, the water coming from the uncontaminated landscape of the Monti Irpini.

This method allows to obtain a paste that keeps intact, in all long and short formats, Raw materials’ nutrients used.

100% italian wheat

 

To satisfy the growing demand for Italian market’s quality and foreign, the Pastifcio Graziano is engaged in a constant and rigorous raw material’s selection. The durum wheat semolina that joins in our native waters is the one done with grain 100% Italian, coming from the hinterland of the Campania, of Puglia and Basilicata.

The varieties of wheat are selected for their high protein content which ensures a good toughness’ index to our pasta. The result is a pasta’s plate always “frm to the tooth”, elastic and well digestible. Moreover, the fours must be produced from wheat milled in lightly, with a of mill revolutions’ number content to maintain the fragrance.

The organoleptic qualities of wheat used, and the light-yellow color of the paste remain intact thanks to the drying process slow. For the more discerning palate,in our special line “Senatore Capelli”we exclusively use best quality wheat.

In producing our pasta doesn’t go down to no compromise to offer our customers an excellent quality product. Transparency, sustainability and quality are our values we demonstrate with the strict controls that we carry on the entire production chain, from the choice of the grain 100% Italian, until to the use of water subjected to treatment of ultra-fltration able to remove or reduce the presence of chlorine and heavy metals, analysis of the department of chemistry and biology of the University of Salerno, to ensure total of products’ traceability. Indeed to discover from where comes our pasta just use the batch number on the package’s label purchase. Finally, our Pasta is one of the few to boast of Kosher and Halal’s marks that certify conformity to ethical standards and hygiene of the law and of the doctrine of Jewish and Islamic.

The drawing process

The drawing process is the most important one steps in the pasta’s preparation of high quality. For this reason, we have chosen to use the bronze drawing process with drying at low temperatures where the drying time can vary depending on the weather conditions (40/45° for 24/48 hours) on frames in static cells. This gives the pasta a particular roughness that greatly increases the absorption of any condiment. But the desire to give the consumer a product which is always better encouraged us to start a prestigious collaboration with laboratories of the Department of Chemistry “A. Zambelli”of the University of Salerno. The fruit of this scientifc research and the subsequent experimentations was the patent new exclusive models at the forefront that involve the use of platinum and silver drawing- process: this important innovation allows to limit the wear of the materials of the drawing with consequent meaningful decrease of the slag, and improve the thermal aspect of extrusion to ensure maximum pasta’s uniformity. The latest additional is the start of integral lines and biological’s production, dedicated to those who are careful to the health and well-being.
